Responsabilities
- Helps leads and coaches the Food & Beverage Operations team, having their areas of responsibility provide exceptional guest service, employee satisfaction and profitability
- Assists in the preparation of the annual Food & Beverage budget, capital plan and strategic projects.
- Directs and assists in the development and implementation of innovative promotional and sales events
- Directs and assists in the development and implementation of innovative promotional and sales events
- Constantly seeking out creative ways to improve service and overall F&B revenues and profitability
- Develops and maintains close and effective working relationship with all supporting departments
- Helps ensure that monthly financial obligations and budgets for food & beverage are accurate and on target
- Ensure the implementation and compliance of minimum standards as outlined in the Fairmont Food and Beverage Core Standards
- Oversees the development of creative cutting-edge menus, wine lists, service delivery and standards for all food and beverage operations
- Ensures the ongoing professional development, growth, and satisfaction of all leaders and colleagues through their respective departments
- Promotes and ensures a clean and safe working environment, with continual emphasis on promoting employee health and safety
- Trains and develops all employees ensuring that they are informed regarding responsible service of alcohol and adherence to Hotel and Company policies
- Oversee beverage ordering and inventory control for the F&B division
- Maintain and improve beverage margins through effective controls and correct pricing procedures
- Undertake any F&B projects as required
- Facilitate current Food and Beverage training when required including training of employees on POS system (Silverware) as well as programming and maintenance of
- Follow up on training programs to address any additional needs
- Work in close cooperation with outlet supervisors to pin-point areas for improvement and implement changes
- Develop and implement training programs tailored for the individual outlets based on outlet standards of performance (i.e. wine seminar, up selling, responsible alcohol service)
- Measurable standards of performance will include: VOG scores, Health and Safety Targets, Monthly Financial Targets and Individual goals
- 5 years experience in Food & Beverage with a broad operational knowledge and a minimum 2 years in a Management role is essential
- Strong culinary and wine knowledge required
- Degree in Hotel/Restaurant Management or related discipline is a strong asset
- Previously demonstrated leadership skills which supports an environment of employee growth and development, interdepartmental teamwork and exceptional customer service
- Ability to analyze data and trends and create strategies for improvement
- Innovative, creative and willing to take risks
- Excellent knowledge of beverage operations, purchasing and margin control essential
- Strong knowledge of MS office essential
- Frequent standing and walking throughout shift
- Frequent kneeling, pushing, pulling, lifting
- Occasional ascending or descending ladders, stairs and ramps
